Aussie couple moving over in May

Looking for a room or to team up with someone to find a rental with myself (30) and my partner, Simon (35).
We're from Australia (Perth), where I am an exploration geologist and Simon is an oil and gas engineer. We like to spend our spare time travelling when we can which is mostly why we're moving to London (to see more of Europe). But we're also hard-workers so we tend to enjoy quieter nights in at home during the week, cooking dinner, watching tv, and saving our energy so that we can enjoy the weekend. We’re both pretty laid back, love a good Chardonnay but each respectively enjoy our own favourites: Simon is a typical aussie guy who loves a beer while I'm more of a margarita type of girl. We like exploring restaurants and bars and hope we can find a housemate who will enjoy this with us from time to time.

We're moving to London 18 May, but for the first few months Simon may be working in and out of Australia so it could just be me. I have lived in London before (pre-COVID) with as many as 6 people in one flat but it worked because everyone was very easy going, respectful of each other and worked together to keep the flat clean. I honestly had the best time and I'm still friends with those housemates to date but believe it all comes down to finding like minded people!

I've started putting in rental applications for 2 bedroom properties within Central London (e. g. Marylebone, Paddington, Kensington, similar areas).i just applied for a place in south Kensington (2 bed, 2 bath, which would be about 1800 pounds pcm for each room but will consider other price ranges.
